VARIOUS HIGH MONOUNSATURATED EDIBLE OILS MIGHT AFFECT PLASMA-LIPIDS DIFFERENTLY IN MAN

摘要
This study investigated the effects of three high monounsaturated edible oils with different fatty acid compositions on plasma lipid metabolism in man. Ten healthy young men were engaged for this study, and received four various experimental meals respectively prepared with different cooking oils, i.e. olive oil, liquid lard, rice bran oil or soybean oil (control). These oils supplied 32.7% of the daily total calories for a period of 18 days, and had normal diet at each interval of two experimental diets for at least 18 days in order to return to the previous normal physiological condition. Results showed that the reducing effects of the rice bran oil and soybean oil diets on percent changes of the plasma total lipids, total cholesterol and LDL-C were significantly larger (P<0.05) than the ones of the olive oil diet. The data also demonstrated that ingestion of soybean oil might have lower HDL-C than of olive oil. The results indicated that the saturation, P/S and P+M/S ratio of various edible oils had no consistency with the responses of plasma lipids. Therefore, it might suggest that effects of certain fatty acids in an edible oil may be stronger than its saturation on lipid metabolism.
