摘要
A water‐soluble factor (or factors) in tomato which bleaches β‐carotene in the presence of unsaturated fats has been studied. It behaves like haematin and not as a true lipoxidase. Inhibition of this factor and of haematin‐catalysed oxidation of linoleate by water‐soluble constituents of the juice has also been demonstrated. Copyright © 1968 John Wiley & Sons, Ltd
