EFFECT OF SIRE BREED ON EATING QUALITY OF CROSS-BRED LAMBS

摘要
A comparison was made of the eating quality of lamb produced by 6 sire breeds (Texel, Dorset Down, Suffolk, Oxford, Cotswold and Southdown) on a common ewe type. Taste panel and instrumental measurements showed that sire breed had no effect on the color, texture, flavor nor on juiciness of roast M. [musculus] longissimus dorsi. The findings are discussed in relation to consumer attitudes.
