大越豆芋是一种豆科植物,其不仅含有丰富的蛋白质、脂肪酸、多种维生素和矿物质,还含有异黄酮、胰蛋白酶、凝集素等多种生物活性成分,是一种高能量、高营养食物。栀子是我国的一种传统中药,属卫生部颁布首批药食两用资源,其含有环烯醚萜、藏红花素、黄酮等多种功能成分,具有广泛的应用价值。本文以大越豆芋和栀子为原料,旨在开发一款新型的金黄色植物蛋白饮料。本文的主要内容有:1、在确定豆芋汁制备最佳料液比为1:20的基础上,以酶解后还原糖含量为指标,通过单因素和响应面实验,确定豆芋汁酶解最优工艺为:加酶量为50U/g、酶解p H5.5、酶解温度93.4℃、酶解时间46min。2、以蛋白提取得率为指标,采用碱溶酸沉法,通过单因素和正交实验,确定豆芋蛋白提取最优工艺为:料液比1:10、碱溶p H10.5、提取温度45℃、提取时间3h、酸沉p H2.5。3、以取代度为指标,采用水相法,通过单因素和正交实验,确定辛烯基琥珀酸豆芋淀粉酯制备的最优工艺为:淀乳浓度35%、辛烯基琥珀酸酐添加量为3%、稀释7倍、反应温度35℃、反应时间5h。以自制辛烯基琥珀酸豆芋淀粉酯和栀子油为原料,确定其乳化栀子油的最优条件为:辛烯基琥珀酸豆芋淀粉酯浓度0.24%、乳化时间3min、乳化温度50℃、p H为7.56。4、以透光率和沉淀率为指标,确定调配豆芋汁中乳化剂最优配方为:单硬脂酸甘油酯和蔗糖酯之比为4:23,添加量为0.08%;稳定剂最优配方为:卡拉胶单加,添加量为0.04%。采用简单排序法和标度法,确定栀子粕最佳添加量0.08%,白砂糖最佳添加量为4%。
