摘要
Monoterpenol glucosides extracted from Muscat grape marc were hydrolyzed by the exocellular beta-glucosidase of Candida molischiana 35. The enzyme was used free and in its immobilized form in sodium alginate beads. In the presence of the free enzyme, a significant production of monoterpenols was observed, despite the presence of an important fraction of bound aromatic compounds, towards the end of the process. When the enzyme was immobilized, the production of monoterpenols was markedly reduced.
