摘要：

β-葡聚糖是食物中一种重要的膳食纤维,具有重要营养价值和生物功能,可通过多种提取方法获得.提取方法的不同会影响到β-葡聚糖的质量、结构、分子质量以及其他功能和属性.阐述了β-葡聚糖的来源、提取、结构、分子质量等方面的研究进展.同时,还对β-葡聚糖在健康保健方面的应用进行了概述.
