果蔬保鲜新技术研究进展

摘要
近年来,中国的果蔬产业取得了巨大成就,果蔬保鲜技术也得到了长足发展。然而随着人们生活水平的不断提高以及对食品安全问题的普遍关注,对果蔬保鲜产业也提出了新的要求:即天然、安全、营养,因而果蔬保鲜新技术研究很受关注。作者分析了国内外果蔬保鲜技术的综合情况和安全状况,提出了中国果蔬保鲜新技术的研究方向,旨在为同行提供一定的借鉴和参考。
