食用菇类中抗氧化活性物质的研究

摘要：

对37种食用菇类的子实体进行了水浸抽提和乙醇沉淀多糖的处理,通过抑制红细胞溶血和脂质过氧化的方法,测定了子实体水提物（Fa）及乙醇沉淀多糖（Fb）的抗氧化活性.结果显示干巴革菌（Thelephora gan-bajun）的 Fa 及 Fb 同时具有显著的抑制红细胞溶血和脂质过氧化活性,是筛选得到的最佳菇类;冬虫夏草（Cordyceps sinensis）、巴氏蘑菇（Agarius blazei）和草菇（Volvariella volvacea）的 Fa 具有较显著的抗氧化活性;鲍鱼侧耳（Pleurotus abalones）的 Fb 抗氧化活性比 Fa 有明显的提高,说明 Fa 是其主要的抗氧化活性成分,具有进一步分离纯化及构效研究的价值.
