产胞外多糖的乳酸菌的简便筛选与鉴定

摘要
乳酸菌胞外多糖具有优良的功能性质。根据产胞外多糖乳酸菌的性质,开发了菌落拉丝法作为产胞外多糖乳酸菌的简便初筛方法。以分离菌落在MRS筛选培养基上的拉丝长度为初筛指标,以胞外多糖产量(硫酸-苯酚法)为复筛指标,从自然发酵酸乳和自然发酵蔬菜中分离得到了3株胞外多糖产量较高的乳酸菌,经API细菌鉴定系统鉴定,分别被鉴定为短乳杆菌BT0898、植物乳杆菌NYC30和鼠李糖乳杆菌YHOC137。
