真菌多糖结构修饰及鉴定研究进展

摘要
真菌多糖具有抗肿瘤、抗凝血、免疫调节、降血脂、抗病毒等多种生物活性,其生物活性与多糖的结构密切相关。近年来,国内外对多糖的结构修饰方法、结构与功能关系的研究越来越热。对真菌多糖结构修饰方法进行了简述,并阐述了4大波谱(紫外光谱、红外光谱、核磁共振波谱、质谱)在结构修饰多糖鉴定中的应用。
