摘要：

乳蛋白是乳中最重要的成分 ,包括酪蛋白、乳清蛋白和乳脂肪球膜蛋白等。本文对乳中主要蛋白质的结构组成特点、分泌的规律和功能等进行了综述 ,并介绍了国内外乳蛋白研究的最新进展及其研究乳蛋白的意义。
