事前认证还是事后追溯?——食品安全信息标识的消费者偏好及其交互关系研究

摘要
本文融合随机n价拍卖实验和菜单选择实验的各自优势,以番茄为例,分析了消费者对食品安全认证标识(有机标识、绿色标识和无公害标识)和食品可追溯信息标识(种植可追溯信息标识和销售可追溯信息标识)的支付意愿以及各种标识之间的交互关系。研究发现,消费者普遍愿意为这两类食品安全信息标识支付价格溢价;消费者关于食品安全认证与食品可追溯体系的知识可以显著提高消费者对有机标识和可追溯信息标识的支付意愿,而对绿色标识和无公害标识的支付意愿影响较小;有机标识、绿色标识和无公害标识两两之间存在不同程度的替代关系;种植可追溯信息标识和销售可追溯信息标识之间存在双向互补关系;可追溯信息标识与有机标识之间呈现双向替代关系,而与绿色标识之间呈现单向替代关系。
