摘要
The extracellular amylases produced by Schwanniomyces castellii were studied to characterize the production distributions and starch hydrolysis rates. During amylose hydrolysis, the action of alpha -amylase produced short chain oligomers. The subsequent hydrolysis of these oligomers by glucoamylase produced glucose as the end product. During amylopectin hydrolysis, rate limiting dextrins with alpha -1,6 glucosidic linkages were formed. These dextrins remained in the hydrolysate until their alpha -1,6 linkage was hydrolyzed by glucoamylase. Kinetic parameters of glucoamylase varied with chain length resulting in reduced hydrolysis rates at low degrees of polymerization.
