摘要
Foods are complex mixtures containing both carcinogenic and anticarcinogenic substances. During the past ten years, there has been increasing interest in individuating and establishing the roles of the various antimutagens/anticarcinogens in the diet. Several compounds appear to protect against both mutagenic and carcinogenic effects. Short-term tests, in particular, have proven to be important tools for elucidating the mechanisms of action of these substances.
