摘要
In aerated, glucose-limited continuous culture, Lactobacillus plantarum altered its metabolic pathways of acid production in response to changes in environmental pH. Under acidic conditions, acetate and L-lactate production decreased with decreasing pH, whereas levels of D-lactate increased. In the presence of 6% NaCl, acetate and lactate production continued, but no acetate was detected at pH 4.5.
