Many recent, and partly unpublished, thermodynamic data concerning the aqueous solutions of mono- and oligosaccharides (including cyclosaccharides) are critically reviewed, reference also being made to other physico-chemical properties. New hypotheses on the state of the water in the hydration shells of sugars are discussed in the light of interactions with a third component. © 1990.
