摘要
A specific and sensitive colorimetric method for the determination of galactomannans has been developed based upon the specific oxidation of galactose using galactose oxidase enzyme. The assay is useful for the specific identification of food-grade galactomannans, guar and locust bean gum (LBG) in polysaccharide blends and isolates from food formulations.
