摘要：

姜黄素(curcumin)是从姜科姜黄属植物姜黄、郁金、莪术的干燥根茎中提取的一种天然有效成分,药理作用广泛,毒性低,耐受性好,由于其经济价值,已成为开发热点。现代医学研究发现人体众多疾病的形成与自由基的形成、炎症反应的参与有关,姜黄素的多种药理活性与其抗氧化、抗炎作用有关。姜黄素的抗氧化活性和抗炎作用已引起国内外学者的广泛关注,就近年来姜黄素在抗氧化、抗炎两方面的有关研究予以综述。
