摘要：

微生物油脂是一种应用前景广阔的新型油脂资源,正越来越受到人们的重视,尤其在生产富含不饱和脂肪酸的功能性油脂方面已成为研究热点。该文对微生物油脂的特点及组成、产油微生物必备条件及常见种类、微生物油脂的生产工艺等方面进行了综述,展望了其研究的发展前景。
