摘要
A comprehensive review of the reactivity of NO complexes of myoglobin is presented. The review covers mainly literature dated later than 1992. The chemistry of myoglobin and NO in relation to meat curing is reviewed more specifically, and literature dated before 1992 is also addressed. The interactions of myoglobin with CO and O2 are reviewed, including theories for the ability to discriminate between the two ligands.
