Liquid injection gas chromatography and the ALDH assay overestimate free acetaldehyde in complex fermentation media

摘要
Almost 75% of the free acetaldehyde added to an uninoculated culture medium was lost upon overnight incubation due to reaction with yeast extract and tryptone. In the presence of these components, liquid injection gas chromatography and the ALDH assay substantially overestimated acetaldehyde concentrations, highlighting the importance of head space gas chromatography in obtaining reliable estimates of the free acetaldehyde concentration.
