摘要
The theory and applications of X-ray diffraction spectroscopy in the study of fat polymorphism is reviewed. The principles behind the diffraction of X-rays by crystals are described along with descriptions of the techniques and equipment used. The use of this technique in the study of fat polymorphism has proven extremely useful in developing an understanding of how triglyceride crystal structure and dynamics influence texture and quality of plastic fats.
