陕西关中人工栽植的火棘,成熟果实相对含水量、灰分、粗纤维、粗脂肪、可溶性蛋白、有机酸、VC、VE、水溶性果胶、单宁以鲜果计算分别为74.28%,0.50%,8.15%,5.28%,0.016%,0.84%,0.14%,0.0041%~0.0045%,3.14%,0.094%;总糖为5.64%,其中可溶性糖3.80%,还原性糖3.08%,蔗糖0.47%,果糖1.45%,葡萄糖2.13%;氨基酸以谷氨酸含量最高达2.368%,其次为天冬氨酸0.887%,精氨酸0.772%,人体必需的氨基酸高达2.26%,婴幼儿必需的氨基酸达0.92%。钙、铁、锌、硒分别为387.5,72.5,16.5,3.5μg/g。火棘果实内不含淀粉,所有有机物的含量均随果实成熟后采摘期的延长而下降。
